“Baccalá in potacchio” and Verdicchio Vecchie Vigne

In there is a section called "Gluck - the evening bottle", where the Slow Wine partners -spread all around Italy- write their impressions regard wines tasted the evening before during dinner time.
Among them Francesco Quercetti from Marche that, loyal to his origins, suggests regional and typical pairings like the one with "baccalá in potacchio" and Vecchie Vigne 2011.
