Behind a seemingly simple sandwich lies a meticulous journey of research: from selecting the bread that best complements each filling, to choosing the finest ingredients and defining the perfect cooking techniques. Every detail is carefully designed to create harmony between textures and flavours.
The same pursuit of balance characterises our Metodo Classico LH2 Version 16, a cuvée of Verdicchio and Chardonnay from different vintages, refined through ageing in stainless steel and small oak barrels, and enriched by a long maturation on the lees.
This philosophy inspired a contemporary interpretation of a classic Roman tradition: the Maritozzo Romano created by Chef Leonardo Castaldi, Resident Chef at our Wine Not? Bistrot – Grand Hotel Palace in Ancona.
Low-temperature cooked tuna marinated in soy sauce, green tomatoes with basil and the freshness of mixed salad leaves come together in a soft bread, specially created to enhance every ingredient. The richness of the tuna is balanced by the freshness and lively acidity of the Metodo Classico, while the softness of the bread enhances and extends the elegant notes developed through lees ageing, resulting in a long, harmonious and captivating finish.

LH2 Version 16 is born from the encounter between Verdicchio and Chardonnay from different vintages. Maturation in stainless steel and small oak barrels gives depth and aromatic complexity, while the long ageing on the lees defines a Classic Method sparkling wine of great balance, elegance and distinctive character.

Chardonnay 27% (including 5% from the 2022 vintage)
Ageing
12% of the Chardonnay is aged in tonneaux, while the remainder of the cuvée matures in stainless steel.
