Version 16 – just like the number of years since this wine was first released. A cuvée made from Verdicchio and Chardonnay grapes, matured in both stainless steel and small wooden barrels to achieve greater aromatic complexity. The prolonged ageing on the lees results in a sparkling wine with a defined character and depth.

HARVEST TREND
The 2023 vintage was marked by extreme weather conditions: abundant rainfall between autumn 2022 and spring 2023 required intensive vineyard management to combat downy mildew, through targeted organic treatments and meticulous canopy management. The particularly warm summer, beginning in mid-July, together with the water reserves accumulated earlier in the season, favored optimal grape ripening, resulting in excellent overall quality despite reduced yields.

VINEYARD
The vineyards are between eight and thirty years old, trained in the Guyot system and located on the hill slopes at about 200-350 meters a.s.l, on both sides of the Esino valley. The soils go back to pleiocene‐pleistocene formations and are characterised by very deep, medium‐calcareous loams.

YIELD PER HECTARE
The vineyard yields never exceed 7 tons per hectare.
VINIFICATION
After a soft pressing, the free‐run juice is rapidly chilled down and undergoes a cold settling.
AGING
Alcoholic fermentation of the Chardonnay takes place in steel tanks and subsequent aging takes place in small wood. Verdicchio is fermented and aged in steel tanks. Then blending is carried out between the bases to be made sparkling from different vintages, and then sparkling takes place at a controlled external temperature. Bottle aging for 25-30 months perfects the maturity and balance of this Metodo Classico. Residual sugar is from 3.5 to 4.5 gr/lt.

Tasting
COLOR
Bright straw yellow colour with fine and persistent perlage and perfume of great elegance.
SCENT
The bouquet is typically floral and fruity, with fragrances of bergamot and mandarin combined to herbal aromas. Slightly perceivable delicates and harmonic scents deriving from the ageing in contact with the yeasts.
TASTE
On the palate is creamy and pleasantly effervescent, the long finish shows a good minerality with fresh notes of dry fruit.
PAIRINGS
Ideally served with fish based dishes, shellfish and sushi.
SERVING GLASS
Flute with broader body and a narrower top edge to allow adequate oxygenation and development of complex and tertiary aromas typical of the Metodo Classico sparkling wines, without compromising the evolution of the perlage.
