Umani Ronchi and Pastificio Mancini: educational dinner on 3 December at Wine Not in Ancona
Like wine, pasta is a living product, an expression of its specific agricultural year. Starting from this vision, Massimo Mancini, agronomist and owner of Pastificio Agricolo Mancini in the heart of le Marche, has developed a production philosophy based on a short supply chain and agricultural identity, choosing a model that values the land and its raw materials.
On the 3 rd of December we will host an educational dinner at Wine Not in Ancona, dedicated to the history, technique and flavour of Mancini’s artisanal pasta. It will be a narrative and tasting journey guided by Massimo Mancini and Michele Bernetti, featuring comparisons, vertical tastings and visual analyses, as wine and pasta share similar approaches. Soil care, respect for natural rhythms, and attention to the details that define the character of agricultural production — from wheat to vine — form part of their shared experience, weaving together production culture and tasting.
An “educational” evening designed to offer an in-depth exploration of the agricultural and production quality of the Marche-based pasta factory, where pasta is made exclusively from wheat grown in the surrounding fields.
The menu is curated by Wine Not’s Resident Chef, Leonardo Castaldi. Completing the journey are the Umani Ronchi wines, natural companions to an encounter that speaks of territory, identity and courageous choices.
